Ahhhh.... Belinis

Hello Lovelies,

The temperatures in central Texas are steadily rising into the high 80's already, which means its time to start brining out my favorite summer cocktails... Now, truth be told I am a sucker for a great mojito... really I love them, but I am not terribly adept at making them at home. I'm sure it's just a matter of finding a recipe (heaven knows we have enough cocktail recipe books I'm sure I could find one) and practicing that recipe until I perfect it... But I have to say, when I'm at home, especially after a long day of work and a long commute to get there, I'm opting for the easiest, smile inducing cocktail I can find... and a perennial favorite of mine is the Bellini!

Now, I know, I know this looks an awful lot like a mimosa... except for one key ingredient... ditch the OJ and add peach nectar (I also use nectarine nectar, and I've seen watermelon bellinis, but I'm not a huge melon fan so I didn't try one). Trust me lovelies, champagne... peach nectar.... on the back patio... with my dogs at my feet... in 80+ degree weather... it really doesn't get much better!

What are your favorite summer cocktails?

Ahhhhh.....that looks SO delish. Just a little bit more time and I'll be able to indulge!!!!

While I've never been a crazy margarita fan, I have been craving one like crazy the past two weeks. Our first date once Pud is here is going to be at a Mexican restaurant for margaritas!!!

My favorite all time summer drinks are champagne, white wine, vodka and soda with two limes, and sweet tea vodka with lemonade. All delish and all have a time and place.

Have you had a skipper? Perhaps I'll do a post on these this week! B loves them!

Oooh I love champagne drinks! Since I can't handle the hard liquor anymore and am more of a wine drinker in general, I usually opt for bubbly drinks, especially in the summer. Mimosas, bellinis, I also enjoy sangria. Great idea for a post! Summer is coming!

The belini at Maggiano's is amazing. Have you ever tried it?

Sounds amazing, we need it in our 97 degree heat in Florida!
